This is partly because during meiosis, the chromosomes cannot equally divide to give potentially functional haploids. Very occasionally, a haploid containing enough genetic material is formed - but this is a rare chance event.
I did some research later on (ahem, I meant googled) and found that apparently it's impossible for dogs to mate successfully with Foxes as they have completely different amounts of chromosomes!
You are mistaken, it would be quite possible for them to mate, but impossible for them to breed!

I thought things would only produce viable offspring if there was only 1 number of chromosomes difference. That way it's the sex chromosomes that don't line up making them sterile?

I was asked to look at my mother-in-law's tiny 12yo Staffie bitch late one evening as it has a vaginal discharge. I confidently diagnosed a pyo and made arrangements to see it/spey it in the morning.

By 7am the next morning it had had (completely unassissted) the most enormous single puppy who must have been sired by their GSD guard dog (the only male dog on the farm). The pup grew to be huge, ugly and a very unattractive shade of brindle. We have jokingly always called it the 'council estate dog'...

Re: Most interesting cross-breed you have seen...

I recently saw a Dog de Bordeaux X Basset Hound pup. The mother was the DdB!!! It was an accident and sadly mum died after giving birth to 15 pups.

When I was still doing OOH work I had two phone calls from a man who was very insistent I call him an ambulance for his pregnant wife. Despite the fact that the answerphone clearly states we are a vets, as did the way I answered the phone TWICE, it was very hard to make him calm down and dial 999. Another phone call to a colleague of mine at 2am asking who it was this man had rung. Turns out he was looking through his phone bill, didn't recognise the number and thought his wife / partner was having an affair. I guess we didn't charge him enough if he didn't remember the OOH call-out!

The strangest "crossbreeds" I have seen are a red African Grey (the clue is in the name) and the orange Green Iguana. The owners had paid extra for these rare varieties only to be told they were ill and would either go back to normal colour or die
