Wot a load of nonsense! Who told you that?

You can argue that the likelihood of a third party seeing these details and them actually using them for another purpose is lower than the probability of homeopathy working. I'd be more worried that someone without official access was wondering around in the first place, more of a security issue I'd say.

There is a big danger of over-thinking the implications of GDPR. So long as you have done your data audit and staff training and recorded them, and can justify how you use and store data, legitimate interest and 'previous intention to purchase' cover most of your requirements, a modicum of common sense and good housekeeping takes care of the vast majority of everyday practice.

I'm not sure that GDPR makes any changes from what the current laws would expect regarding privacy of personal data for people that would specifically change what you do in such a situation? If you have the public walking round your kennels you probably already should not have confidential information on public display?
When I was in hospital last week (just visiting) the ward boards had the patient names, but obviously not phone numbers etc, on display.
