My contract does not stipulate how many hours I can be asked to work, just that any changes will be "by mutual consent", which it isn't.
On the face of it you are right to feel aggrieved.

I'm not a lawyer but it seems to me that your employer just can't do this. Speak to the BVA or other legal helpline straight away.

As James suggests, discuss it verbally with your employer straight away . He may not be wicked, just harassed and thoughtless. If the verbal discussion brings a satisfactory resolution, I'd suggest you record the outcome on a piece of paper that you both sign. If the outcome is not satisfactory, write your employer a formal note of protest and keep a copy. If you decide to work the extra hours for the time being, make it clear that you are doing it temporarily, out of goodwill and a desire not to cause excessive disruption.

If you don't do these things you might I think be held to have consented.

Of course you have to be prepared to follow this up, but experienced vets are still sought, and there are jobs out there. It might make your boss realise where their priorities lie if nothing else. Could you volunteer to look at the rota and see if any beneficial changes can be made? Are some people not fully utilised in the current rota?

Re: Employment contracts.
Have you tried to discuss it with your employer - air your grievance, and explain that the contract is by mutual consent (which I assume is signed by you and your employer?). Failing that speak to BVA advice or free legal advice/employment law initially
Would second that, used the BVA advice line before and very helpful advice.

Hope it gets sorted for you. Failing that there are a lot of jobs around currently and some very helpful recruitment firms ;-)

And if all daytime do you do any on call? They seem very long to me, but I do nights and weekends which means our daytime rota gives us all more time off to allow all of us some off time. As an employer I certainly wouldn't increase staff hours without discussion (or a pro rata increase in salary of course).
