Yeah, you really need a meat smoker, much better food and easier to keep uncremated! ( for bbq raise your grill and let the coals settle. &lt;p&gt;That&amp;#39;s because you&amp;#39;re doing them in summer, which is the wrong time of year entirely. What I do, is have them in winter. My St.Nicholas WInter Barbeque, to which I invite all the neighbours, is much more fun.
