It depends what you mean by crown amputation.

If you've done as you should have, and removed as much of the tooth as you reasonably can, and what's lefty is well buried (oops, that's a significant typo, I think I'll leave it in! ), 2mm below general gum level and no spiky bits, you don't need to suture anything.

RE: Tooth Removal
What about tooth resorption teeth that you've amputated the crown; should I worry about suturing?
Presumably you've done an envelope flap in order to perform the crown amputation. I would then put in a couple of sutures.

I agree with Evelyn that not everything requires suturing. Indeed if you have done a closed extraction you may not be able to appose the gingival margins without tension, and if you try and suture with tension it is likely to break down. It has been suggested that sutures are necessary to retain the clot which in turn is critical for post-extraction healing, but I don't believe this is necessary - the clot stays in fine on it's own.
Humna dentists leave tips of roots to reabsorb/fall out, but we don't seem to. Why?
I would add to Evelyn's comments that human patients are presumably informed that a piece of root is being left in situ and to contact the dentist if there is any ongoing or future pain. Our patients are notorious for concealing oral pain so I would worry that while many of these will cause no harm, some may be painful and we will not know. I would also expect the remnant to be radiographed at the next check up. The same should apply to our patients: owners MUST be informed if bits are left behind and I would always advise re-radiographing in 6-12 months (though admittedly they are sometimes reluctant to do this if all seems well).

RE: Tooth Removal
You only need sutures if you've raised a flap
Only if they've made a b****r of it and broken the root and can't get the broken tip out easily.
but we don't seem to.
Yes we do if the trauma that would be necessary to remove the broken tip would outweigh the chances of harm from leaving it.

It also depends upon the reason for the extraction. As an extreme example, if you are doing a total extraction tp treat a case of Feline Chronic Gingivostomatitis Syndrome (FCGS) then if you leave a tip behind you've wasted your time (and it's not altogether clear why). Whereas if you are extracting a little premolar because it's fractured, a broken tip can safely be left as long as it's well buried.
Also I've been told recently that it's best to suture a socket,
That's nonsense. Who told you that? You only need sutures if you've raised a flap; or sometimes if you've taken a row of teeth and the gingiva seems to be flopping open.
